Sigrun Olafsdottir is the Office Manager and deals with the paperwork amongst other things. She has 15 years of experience in web production and is also an accomplished writer and ambassador for Icelandic cuisine, sagas, mythology and culture. In her spare time she voluntairs her work for the Icelandic Society in the UK where she is a boardmember as well as the editor of the quarterly magazine and web editor of their website which attracts over 2000 visitors monthly.
